With the recent heat wave, some cool meal options can help take the temperature down a notch around your kitchen and dinner table. These two delicious salads could be just what the weather man ordered.

Corn, Tomato, & Avocado Salad

recipeThis Corn, Tomato, & Avocado Salad is summer in a bowl! The perfect side dish with anything you’re grilling, or double the portion as a main dish.

 Yield: 4 servings, Serving Size: 1 cup

INGREDIENTS

Corn kernels from 1 large steamed corn on the cobb (1 cup)
5 ounces diced avocado, from 1 medium
1 1/2 cup diced Persian cucumbers (about 3 small)
1 cup halved cherry tomatoes
2 tablespoons diced red onion
2 teaspoons extra virgin olive oil
2 tablespoon fresh lemon juice (from 1 medium lemon)
1/4 teaspoon kosher salt
fresh black pepper, to taste

PREPARATION

  1. Toss all ingredients together and serve immediately. Enjoy!

Chopped Feta Salad

recipeChopped salad with romaine lettuce, Feta cheese, cucumbers, red onion and dill tossed with a simple red wine vinaigrette. A light meal or an easy side salad to go with all your Mediterranean dishes.

Yield: 4 servings, Serving Size: 2 cups

INGREDIENTS

8 cups chopped romaine lettuce
1/2 English cucumber, peeled and diced in large chunks
1/3 cup Feta cheese, crumbled
1/8 small red onion, sliced lengthwise
1/4 cup olive oil
2 tablespoon red wine vinegar
1 1/2 tablespoons fresh chopped dill
1/2 teaspoon kosher salt
fresh black pepper, to taste

PREPARATION

  1. Toss all the ingredients together and serve right away.
